In terms of the decor of the cake for 2011 there seems to be a trend of elaborate decorations for the cake. Such as mimicking the bride’s dress (lace or flowers) or some elaborate part of the theme of the wedding. I have seen beautiful crisp white cakes with what look to be butter cream frosting dipped or sprayed Vanilla wafers that wrap around each layer of the cake. The sugar flowers are still big, along with butterflies, and now etchings or drawings of trees and entire forests on the cake. The colors of the traditional cake is usually white to denote the purity of the bride and the whole ceremony. Now this year and next, that trend has been tossed out the window to replicate the brides’ wedding colors, or the couple favorite colors. Much like the theme of the Groom’s Cake. The Groom’s Cake was first introduced in early American wedding ceremonies. It was traditional for the groom’s cake to be chocolate and maybe decorated with the groom’s hobbies displayed in sugar decorations on the cake. Now though through contemporary times the Groom’s cake is not used much other than in the southern states of America.
The serving of carrot cake may be either plain, with glazed or topped with white icing. It can also be served topped with cream cheese icing and chopped walnuts. And the common butter cake recipe has ingredients of cocoa powder, baking powder, baking soda, flour, milk, sugar, salt, eggs, butter or oil, and water. Other additional ingredients are fruit juices, sour cream, syrups and melted chocolate for devil’s food cake. Ingredients such as liqueurs, vanilla extracts, or liquid flavor i.e. coffee are used by many bakers to enhance and bring out different properties in the chocolate flavor. Also, numerous professional chefs and bakers have experimented unique flavors to chocolate cakes. Some examples of chocolate cakes with flavor combinations include Black Forest gateau, Bûche de Noël, and German Chocolate Cake.

If you must put the cake together the night before (for example, strawberry cake with fresh strawberries in the middle, cut the fruit in half. Smaller pieces will get mushy overnight and not make a good presentation. Not sure how to properly whip the cream for your filling, use the aerosol can version, sprinkle with confectioner’s sugar and add your fresh fruit and cover with more canned whip cream and more confectioner’s sugar. If your cake has a fresh fruit filling and the cake is covered in fondant, stack the cakes at your venue. The fondant will get gummy if you stack them sooner.
