Cakes are one of the favorite desserts of people of all ages. It is always present in various kinds of gatherings. Some cakes are traditionally eaten in special occasions such as at Christmas Eve. Others can be eaten with different toppings and are available in a variety of forms. Some delicious gourmet cakes:
Marine Wild Life Cakes – Incorporate enchanting sea creatures, such as anemones, turtles, tropical fish, sea lions, jellyfish, sea stars, dolphins, whales, or sea horses. We did a wedding in Monterey a few years ago, and the reception was at the Monterey Plaza Hotel – which is right next door to the Monterey Bay Aquarium. The entire wedding party visited the aquarium the day before the wedding, experienced a private tour and had a wonderful time. The aquarium was the perfect inspiration for the theme of the cake. The cake designer subtly incorporated some of the sea creatures from the aquarium into the dessert. The topper was a large pearly clam with jewels and pearls pouring out of it, cascading down the side of the cake. (not real pearls, but fondant balls covered with pearl dust!)
When in doubt, make a test cake to see what happens when you refrigerate your cake with the intended filling and frosting/fondant. You don’t want to be surprised about this. Refrigerated fillings are delicious, though sometime they are a double-edged sword. Butter cakes do not taste their best right out of the refrigerator. Combine them with a refrigerated filling, and you have to make a choice. Cold cake or warm filling. Either one is not good. And, you don’t want people telling the host/hostess that the cake was ”dry” because it was cold. Switch to a different cake recipe or use sugar syrup on your cake layers before assembling to help the cake retain moisture so it doesn’t dry out while in the refrigerator. Remember that gum paste and royal icing decorations on a cake will be ruined if it is refrigerated.

While traditional white, tiered cakes topped with the bride-and-groom figures are still predominant, colorful cakes depicting kooky themes and personally-significant tableaux have taken a strong hold on our pop cultural psyche.
