Beach Relaxation Cakes – Our absolute favorite beach wedding cake is 2 Adirondack chairs as the cake topper, with 2 pairs of flip flops beneath them. Figurines of the bride and groom sitting in the chairs is optional. A regular beach or lounge chair can also be used instead of the Adirondacks. One of our other favorites was a figurine bride and groom snoozing in a large hammock as the cake topper, with sand and miniature beer bottles beneath them.
Should I get fondant vs. buttercream frosting? In my opinion, this decision comes down to one of taste vs design. People who make wedding cakes love fondant because it frees up their design possibilities. You can color fondant to any shade (think Tiffany blue!), mold it to any shape, and it’s easy for the baker to work with.If you plan on an elaborate design, or prefer an untextured look, fondant is for you. Be warned, however, that many people don’t like the way fondant tastes. It has a thick waxy feeling to it and is very sweet. It’s something to be tasted before purchased. Buttercream frosting is when your focus is on taste. Hello people?! It’s got the word ”butter” AND ”cream” in it. The word alone tastes delicious! Buttercream is more of a traditional frosting style for wedding cakes, because of it’s white color and universal taste appeal. It can be used for almost any cake flavor (fruit filled, chocolate, vanilla, etc.).
Sandcastle Cakes – Sandcastles on wedding cakes, are usually used as a toppers. But, we have seen entire cakes shaped like castles, or at least the top half of the cake shaped like a castle, with a few traditional wedding cake tiers below it. To get the sandy effect, the cake can be sprinkled with fine graham cracker crumbs or brown sugar. Palms and Coconut Cakes – To remind you of your beautiful location, how about a subtle design of palm leaves circling the outside cake? A few coconuts as garnish? A cake topper oasis? How about a cracked open half of a coconut as a cake topper, with bride and groom figurines lounging in it, as if it were a hammock?
When in doubt, make a test cake to see what happens when you refrigerate your cake with the intended filling and frosting/fondant. You don’t want to be surprised about this. Refrigerated fillings are delicious, though sometime they are a double-edged sword. Butter cakes do not taste their best right out of the refrigerator. Combine them with a refrigerated filling, and you have to make a choice. Cold cake or warm filling. Either one is not good. And, you don’t want people telling the host/hostess that the cake was ”dry” because it was cold. Switch to a different cake recipe or use sugar syrup on your cake layers before assembling to help the cake retain moisture so it doesn’t dry out while in the refrigerator. Remember that gum paste and royal icing decorations on a cake will be ruined if it is refrigerated.
