Just like there are wedding dress trends there are also wedding cake trends. When I got married, I knew that I wanted my cake to be on three different pedestals arranged askew, not in a row or on top of each other, I was bucking the 2005 wedding cake trend. Back then most of the cakes looked like round hats stacked on top of each other, complete with the bow. Color was just starting to get adventurous, back then. Also I knew after tasting several cakes randomly, that I wanted double chocolate/carob and my friend’s specialty butterscotch rum in the middle. I also, love fondant, so I knew that I wanted that as my frosting. Although I didn’t buck traditional altogether since my cakes were white with purple ribbon at the bottom of each layer with flowers to compliment my dress. Because of my allergy to milk, I knew that the top had to be a white cake and hopefully something that would keep for a year, or so I thought.
Prepare your cookie sheets – Line each one of your cookie sheets with parchment paper cut long enough so that it extends over the side of the pan so that you can fit the parchment down into the corners. If you are not sure how much parchment paper to use, roll it out onto the cookie sheet and then set another cookie sheet on top of it and push down. Cut the excess parchment paper off. Repeat until all of your cookie sheets are covered. Set them aside.
6. Castle Cake, Ok for this fancy castle cake you are going to need four 8 inch square cakes, again cut the dome off the top of each cake so that they are flat on both sides. Next you are going to stack three of the of the cakes one on top of the other with pink frosting in between to hold them together. Next take the forth cake and cut it into quarters placing two pieces in the center of the three you have all ready stacked. Now you can begin frosting the cake with a crumb coat of icing. Simply use four ice cream cones; invert them and place one on each corner of the cake. These will be the towers of our castle. Just cover the entire cake with frosting and add accents, like doors and windows with different colored icing.

Initiate a rapport with them and if they have a blog or participate in social networking or writing articles (such as this one) then read what they are writing and get to know what drives them and whether their goals and personalities align with yours. You need to feel that they take pride in their work and that they will treat your cake with the importance and attention that it deserves and that they want to make your dreams a reality and not treat it as just another cake that they need to make in order to pay their bills.
