What flavors do wedding cakes come in? It used to be that you could have any flavor as long as it was vanilla or chocolate. But…oh how the times have changed! These days you can fill your cake with just about any type of fruit, liquer or cream center. You can even mix the cake layers so some are different flavors from others. A surefire way to find the first compromise for a newlywed couple! Be warned, however, that some bakers will charge you extra for having multiple flavors in the same cake. Definitely ask upfront if this is the case with your baker.

For Starters, The wedding cake has evolved over the years. Starting off as a simple symbol of fertility, it has transformed itself into an artistic tradition that can have many different artistic interpretations. For many ancient peoples wheat was a symbol of fertility and a bountiful harvest. The Ancient Romans used to throw grains of wheat at the bride and groom to ”wish fertility” to the new couple during their wedding. This custom eventually evolved into bringing little cakes made from wheat to the wedding banquet itself. People would then crumble this cake over the head of the bride to wish the happy couple ”many children”. The guests would then eat the fallen crumbs as a symbol of sharing in the couple’s good fortune.
Non-Refrigerated Fillings, Any of the sleeves of fillings bought at your local cake decorating store should be fine at room temperature. So are the jellies, preservatives and ganache. Whenever using the fillings in the sleeves, remember the dam of frosting around the edge of the cake. You don’t want it oozing out once the cake settles. Trust me on this one. That is why it’s best to use the following technique for fillings. Make sure that you have a thick dam of frosting going around the edge of the cake. Add no higher than a 1/4” high layer of filling. For example, whenever I use lemon filling, I split the cake layer in half, add the dam of frosting, spread the lemon filling and then put the two layers together.
