Okay, by now, you know, I do research on trivial/little known traditions, so let me tell you why, supposedly we are to keep the top of the cake for a year and then eat it with your spouse on your one year anniversary. You know I had to know. One, because it seems so random. Two, our cake did not make it through the first six months (My husband had never heard of that tradition and thought that I’d forgotten that we had cake in the freezer. Ate, some of it and then called to remind me that we had cake. Do I hear a collective intake of shocked breath?) The tradition comes from the 19th century [There were a lot of things pertaining to cakes happening during that century. I wonder if Queen Victoria of the United Kingdom loved cake. Yum.] Anyway, during the 19th century, it was usual and expected that the bride and groom would invariably have a child 9 months or so after their marriage, so the top layer of the cake was saved to have at the Christening. This was before refrigeration, so where were they keeping it? For nine months and was it still any good? Boggles the mind doesn’t it? Maybe they were filled with liquor to keep or fermented or fermenting fruit?
The wedding cake style will relate to your choice for the type of wedding you are having and the overall tone you are taking, whether formal, informal, contemporary, traditional, indoor or outdoor. When you have set the style, you can make all of this information available to your cake designer and provide him or her with a photo or idea of the decor with colors and materials, themes and motifs.
Prepare your cake batter. Depending on how many people your cake needs to feed, you will want to double, triple or quadruple your normal cake recipe. Make each batch separately. Take one of the cookie sheet pans and using a cake batter filled measuring glass, add batter until it is half the height of the cookie sheet. Spread evenly.Use a spatula to spread cake batter evenly taking special care to get into the four corner crevices. Repeat using the same amount of batter for the other cookie sheets.
Get a friend or relative to make your cake – this has the added benefits of potentially cutting costs, however if the person you are asking has never done it before you may be putting undue pressure and stress on them. Logistics can also become an issue, especially if you have also invited them to attend the wedding (as depending upon the cake a lot of setting up may need to be performed on the day which may jeopardise their attendance at the service). Another consideration is that unless the person is particularly experienced or skillful you may be somewhat limited in the style of cake that they are able to create (remember that trends have changed a lot over the years – so what was seen as fashionable in your parents or grandparents day is often not seen as being stylish today. However if you are a relaxed bride that doesn’t worry too much about the specifics and budget is a more significant issue then this is definitely an option to be considered.
