Once you know your menu and how many guests are attending, if it is not just a dessert reception, you will want to have a cake that compliments your meal rather than acting against its in taste. Nothing can ruin a great reception quicker than having a strange taste from the dessert after a fabulous meal. You want your guests to leave thinking that not only did they get the best meal, (but where did you find that great cake maker?) (also known as a baker), as well. Also, you don’t want to add all that sugar to your system in one day for another reason, your hips. You’ll still want to be able to get into your dress or suit after all of those tastings.
Do some advance planning. Make sure that your clients or hosts are educated about the types of fillings that would be best suited for their events. Fillings can be made from scratch or bought. The fillings made from scratch are highly perishable and should remain refrigerated. New filling recipes should not be tried the night before an event. If you have to do something new, test the recipe out two weeks before. That way, if you need to make changes, you have time to do it or get help. Fillings that come in sleeves at your local cake store can be used right out of the sleeve as they are and the remainder can be refrigerated up to 6 months.
Get a friend or relative to make your cake – this has the added benefits of potentially cutting costs, however if the person you are asking has never done it before you may be putting undue pressure and stress on them. Logistics can also become an issue, especially if you have also invited them to attend the wedding (as depending upon the cake a lot of setting up may need to be performed on the day which may jeopardise their attendance at the service). Another consideration is that unless the person is particularly experienced or skillful you may be somewhat limited in the style of cake that they are able to create (remember that trends have changed a lot over the years – so what was seen as fashionable in your parents or grandparents day is often not seen as being stylish today. However if you are a relaxed bride that doesn’t worry too much about the specifics and budget is a more significant issue then this is definitely an option to be considered.
