Always refrigerate to let the frosting set. Once it’s set, cover the cake in fondant. Set your cake in a cake box that has room for it to fit without the fondant touching the top or sides of the box. Refrigerate again to set. This is your insurance policy when you deliver the cake. If the party is at your house, and it’s cool inside, you can leave it out. Refrigerating this kind of cake makes it easier to slice so that the filling doesn’t ooze out of every slice. You want a nice presentation. When you cake is removed from the refrigerator, please remember to give it time to ”sweat.” Don’t touch it during this period or you will leave a mark. Let the cake come to room temperature. Usually, by the time you travel to your destination, and it’s time to serve the cake, the fondant will be okay to slice and the dewy, shiny look will be gone.
Why White? White is definitely the color of a wedding, but did you know that there is another reason why the white is the customary color of a wedding cake? Back in Victorian times the finer ingredients of a wedding cake were scarce and hard to come by. If the cake had a white icing, this revealed the fact that only the best and most expensive white sugar was being used. Brown sugar was much more common, and therefore much less expensive. So, the more white the cake, the richer the people.
Fire Engine Cake, What little-boy doesn’t like fire fighters? So why not make a fire engine cake. Simply take three 8×4 cakes and cut off the dome of the cakes in order to have a flat surface on both sides. Then take two of the cakes and place them one on top of the other and glue them together with frosting. Take the third cake and cut it in half stack them on top of each other and stand them on end. Then place it on the end in front of the other cake. This will make the cab of your fire engine. Then decorate with red frosting and pipe on the accents.
Tropical Flower Cakes – Hibiscus, cymbidiums, tuberose, or any of your tropical favorites. They can be used as a flower cake topper, they can cascade down the side of the cake or tiers, or used sparingly throughout. Tropical flowers can also completely cover the cake, or be used just on the base. Wherever placed, they will dress up the most plain and dull cake – and make it instantly gorgeous looking, and smelling.
