Whether you choose the baker down the road, a talented family member, or a pastry chef who specializes in these tasty masterpieces, if you plan well in advance you will be able to handle whatever obstacles might come your way. Some bakers require only a minimum notice, while many bakers are booked far in advance. It’s a shame to have that perfect cake of your dreams be ”cancelled” due to the fact you cannot allocate a baker’s time.

Location – Ideally you would want your Cake Baker to either be based local to yourself (in order to make attending consultations easier) or else close to the reception venue (meaning that your cake will have less distance to travel on the day and less chance of being damaged or delayed, it will also cut down on any delivery charges). Familiarity – Are you the sort of person who would prefer to get to know your cake maker before you entrust them the responsibility of making your cake? If so then you have two options:
Prepare your cake batter. Depending on how many people your cake needs to feed, you will want to double, triple or quadruple your normal cake recipe. Make each batch separately. Use a large glass measuring cup so you can measure how much batter it yields. Note this information on your recipe. Take one of the cookie sheet pans and using a cake batter filled measuring glass, add batter until it is half the height of the cookie sheet. Spread evenly.Use a spatula to spread cake batter evenly taking special care to get into the four corner crevices. Repeat using the same amount of batter for the other cookie sheets.
